The top butt cap is a wonderful tender cut that is overlooked by many. Cross cut against the grain it is one of our favorite cuts. It's bold beefy flavor is a great compliment to our Black Gold Porcini rub. This steak has many names depending on where you are from, but the most common are Picanha and Coulotte. A must try.
Graded at a minimum BMS 8, these are marbled above your highest prime grade steak. Paired with high quality Tajima genetics, you can be sure you are serving the highest quality American Wagyu available.
